The Seasons

Honey is the record of one place in one season. Follow the bloom through the Jordanian year — from the valley below the sea to the wild thyme of the southern highlands.

A year in four seasons

Every honey has its months. The wheel follows the Jordanian year: when each harvest blooms, the season the apiary is in, and where today falls.

Today is 16 October 2026 — Autumn in the apiary.

The heat breaks, the last blossoms open, and the colonies gather their stores for winter.

From below the sea to the highlands

Our first harvest grew below sea level, in the Jordan Valley, a short way from the shore of the Dead Sea — the lowest place on earth. The seasons to come climb into the hills, where spring arrives later and the air is cool and thin.

Altitude of each harvest, from the lowest to the highest:
  1. −430 m Dead Sea shore The lowest place on earth
  2. −220 m Harvest 01 · Sidr · Spring 2026 Jordan Valley — below sea level
  3. 900 m Harvest 02 · Wildflower · Spring 2027 Northern highlands — Ajloun
  4. 1,100 m Harvest 03 · Wild Thyme · Summer 2027 Southern highlands — Tafilah
